homemade salsa verde

Ingredients:

- 10 tomatillos, husked and rinsed

- 1-2 jalapeños (adjust to taste)

- 1 small onion, quartered

- 2 cloves garlic, peeled

- 1/2 cup fresh cilantro, chopped

- 1-2 tablespoons lime juice (to taste)

- Consome (to taste)

Instructions:

1. Roast the Ingredients:

- Preheat a skillet or a dry pan over medium-high heat. Add the tomatillos and jalapeños (you can also roast the onion and garlic if you prefer a smoky flavor).

- Cook, turning occasionally, until the tomatillos are softened and charred, about 5-7 minutes.

2. Blend:

- In a blender or food processor, combine the roasted tomatillos, jalapeños, onion, garlic, cilantro, lime juice, and salt. Blend until smooth or to your desired consistency.

3. Taste and Adjust:

- Taste the salsa and adjust the seasoning with more lime juice or salt if needed.

4. Serve:

- Serve immediately with tortilla chips, tacos, or your favorite dishes. Salsa verde can be stored in the refrigerator for about a week.

Tips:

- If you prefer a milder salsa, remove the seeds from the jalapeños before roasting.

- If you prefer a hotter salsa, add more jalapeños
